Easing into fall with this Cinnamon Pear Gin Fizz 😍 I say every year that pears are the most underrated produce of fall, so I wanted to give them a little love and feature them in a cocktail! I love gin fizzes and I LOVE cinnamon, so I thought this was the perfect early fall cocktail! And listen, YES there is raw egg white in this...it is a standard ingredient in gin fizzes and what makes them extra foamy and have a silky mouthfeel. But you can use pasteurized egg whites from a carton if you're concerned or just omit it altogether. The recipe is below AND on my blog! Happy sipping! Cinnamon Pear Simple Syrup: 1/2 cup sugar 1/2 cup water 1 pear, chopped 1 cinnamon stick Add everything to a small saucepan and simmer over medium low heat for 5 minutes. Turn off the heat and let everything seep for another 5-10 minutes. Strain syrup through a fine mesh strainer into a storage jar. You'll have enough syrup to make 4 cocktails. Cinnamon Pear Gin Fizz: 2 oz gin 1 oz fresh lemon juice 1 oz cinnamon pear simple syrup 1 egg white OR 1 tbsp liquid egg white (you can omit but the cocktail won't be frothy) Splash of club soda  Pear slice, anise star, cinnamon, for garnish (all optional) Cinnamon and sugar, for rimming the glass Combine the cinnamon and sugar on a small plate. Run a lemon rind around the rim of the glass and press the rim of the glass into the cinnamon sugar mixture.  Add the gin, lemon juice, simple syrup and egg white into a cocktail shaker and 'dry shake' for 15 seconds. Remove lid, add ice, replace lid and shake for an additional 15 seconds, or until the cocktail shaker is cold and frosty. Strain the cocktail into a glass with ice and top with a splash of club soda.
