Nihari recipe Serves 9-10 people ✨1st step : Make the bone broth with beef bones and bone marrow (if you can find) ✨Ingredients for bone broth - 3.8-4 lbs bone - 1 star anise - 1tsp shahi jeera - 1tsp cumin seeds - 1tsp saunf (fennel seeds) - 1tsp coriander seeds - 1 bay leaf - Salt to taste - 6 cups of water (bring it to a boil and drain) then add another 6 cups for the broth ✨Step 2 ✨Making the beef/mutton - 3lb beef - 1/2 cup + 2tbsp Nihari masala - Fennel seeds powder - 1.5 tbsp ginger paste - 1.5 tbsp garlic paste - 10cups water - 1.5 cup flour (maida/atta) mixed in 2 cups of water (slurry for thickness) ✨Method for Bone Broth (Total Time: 2.5 Hours) 1. Add 6 cups of water and bones to a pot. Bring it to a boil, then discard the water along with the impurities (gunk). 2. Add another 6 cups of fresh water. 3. Place the spices in a small cloth (preferably cheesecloth) or a tea mesh. If you don’t have one, no worries—you can strain the spices out later. 4. Slow cook over low heat for 2–3 hours. 5. Set the broth aside to use for cooking the meat. ✨ Method for Cooking the Meat (Total Time: 2.5–3 Hours) 1. Heat oil in a pot and add the Nihari meat (large chunks). 2. Sprinkle fennel seed powder and brown the meat for 5–6 minutes. 3. Add onion, ginger-garlic paste, and Nihari masala. 4. Cook over low-medium heat, cover, and cook until the oil separates. 5. The meat won’t be fully cooked yet. Instead of adding water, gradually incorporate bone broth one cup at a time over high heat. Cover and cook for another 30 minutes. 6. Add the bones. 7. Pour in 10 cups of water and bring it to a boil. Then lower the heat and slow cook for another 1.5 hours. 8. Once you see oil floating on the surface, skim some of it off, leaving a little behind. (You can add it back later if desired.) 9. Turn the heat to high and add the flour slurry to thicken the gravy. Stir continuously to prevent clumps. Lower the heat and cook for another hour. 10.
