In the same pan, melt the butter. Add the finely chopped onion and sauté until soft. Add the minced garlic and sliced cherry tomatoes. Season with a little salt and pepper. Once the tomatoes soften, stir in the soft cheese and a splash of water to create a smooth, creamy sauce. Squeeze in the lime juice and stir through the chopped coriander. Gently return the salmon fillets to the pan and let them warm through in the sauce for 2–3 minutes.
