Fall called… it said you need to make these mushroom chai pancakes RIGHT NOW because it’s National Chai Day 🤤🥞🍂 Made with love from @Megan | healthy vegan recipes kitchen & packed with feel-good adaptogenic mushrooms, these pancakes are the fall recipe staple you didn’t know you needed ✌️ Recipe below + SHARE this post with someone who needs a new fall recipe 🍁 INGREDIENTS: • 1 tbsp RYZE Mushroom Chai • 3/4 cup non-dairy milk • 1 tbsp apple cider vinegar • 1 1/4 cup oat flour • 1/4 cup coconut sugar • 2 tsp baking powder • 1 tsp cinnamon • 1 tsp vanilla extract •1/2 tsp salt Icing: •1/2 cup powdered sugar •2 tsp milk of choice DIRECTIONS: 1) Mix the non-dairy milk and apple cider vinegar. Let it sit for 5 minutes to make a vegan buttermilk. 2) In a large mixing bowl, whisk together the oat flour, coconut sugar, RYZE Mushroom Chai, baking powder, cinnamon, and salt. Stir in the buttermilk and vanilla extract. Mix until combined. 3) Heat a non-stick pan over medium heat. Pour batter onto the pan (about 1/4 cup per pancake). Cook about 2-3 minutes, until bubbles form on the surface, then flip and cook the other side for another 2-3 minutes, until golden. 4) Make the icing by whisking the powdered sugar and milk until smooth. 5) Drizzle the icing over the warm pancakes, sprinkle with cinnamon, and garnish with a cinnamon stick.
