30 days of high protein Today is a very simple one  My Vietnamese steamed fish rice paper rolls We grew up eating this but usually it would a whole fish on the bone which made it sweeter and more moist so if you’re doing this for a family a whole fish is highly recommended obviously it’s a little more work but I think the flavour is worth it.  The macros are for the noodles, rice paper, cucumber, pineapple fish and relish.  Carbs 46g fats 14g protein 49g For the fish  260g firm flesh white fish. It was late so I had cod.  2 tbsp light soy sauce 1 tbsp shaoxing wine (optional) 1 tsp sesame oil  1 spring onions finely chopped  Small piece of ginger peeled and julienned  1 Birdseye chilli finely sliced  On a plate add half the ginger, spring onions chilli and pop the fish over the top.  Add the rest of the aromatics over the fish and drizzle over soy, sesame and shaoxing wine.  In a deep pan add a smaller bowl and fill the pans 1/4 way with water.  Pop the plate with the fish on the bowl and cover the pan with a lid.  Place the pan on medium high heat and leave to cook for 7-10 minutes. My fish took 8 minutes and I reckon it would have been fine even at 7 minutes. Please don’t cook this for too long slightly under will be fine as the fish will continue to cook.  I also made a spring onion relish by cutting up 2 spring onions super fine and popping it on medium heat for 2 minutes with 2 tsp of veg oil but that’s completely optional.  Served with  Lettuce  Rice noodles 25g  Cucumber  Pineapple  Herbs (mint coriander and Vietnamese mint) 30g dried vermicelli noodles (cooked and topped with relish) I usually actually don’t have noodles with this just because I don’t ever need it but had it here just so you had the option.
