Plenty of cutting boards covered in epoxy. Totally fine as long as it’s food safe. And probably more resistant than straight wood.

Boney Boards Woodshop :
Epoxy is actually neutral when cured and is ok to use on cutting boards. That said it will dull knives fast then just wood.
