CRISPY BUTTERNUT SQUASH FRIES . These actually come out crispy and they are delicious - the perfect balance of sweet, salty, and smoky. So if you’re looking for a delicious side or just a delicious bowl full of goodness, you’ve gotta make these. . Very important: high temperature  is super critical for this recipe, we’re gonna be baking these at 450F, and thats critical for these to come out delicious . Here is how I made them: . 1.Grab a large butternut squash and cut in half. Remove the seeds, then peel. . 2.Cut squash in fry shapes. You’ll want about 1/4 to 1/3 inch thickness maximum so it cooks evenly and gets crispy. . 3.Now, to season it, in a bowl, combine 4tbsp olive oil, a couple pinches salt, 1 tsp smoked paprika, 1 tsp oregano, 1 tsp onion powder, and chili flakes. Mix well, then toss in the squash and make sure they’re even coated on all sides. . 4.Finely shred pecorino cheese in a bowl (about 2 cups freshly shredded) and dip both sides of the butternut squash into the shredded cheese. You can use however much or little you like, but this was the sweet spot. . 5.Place the butternut squash on parchment paper on your baking sheet and place in oven at 450F for 20 mins. At 20 mins, flip, top with more cheese (if desired) and put back in the oven for another 2-3 mins. . 6.I served this with a ridiculously easy but good chili lime sauce. To make it, combine 4tbsp thick greek yogurt (or sour cream), 1 to 2 tbsp mayo, 1/2 tsp smoked paprika, 1/2 tsp onion powder, 1/4 tsp cayenne powder, a couple pinches salt, and the juice of half a lime.
