moussaka is a great dish for eggplant, also a lot of variation depending on what you like and what's seasonal. you can layer is with other vegetables

We always cut them and soak in water and salt for about 20 mins takes out all the sap that can make them sour xx

Dice it up skin on and olive oil garlic sumac oregano garlic powder paprika chilli flakes heavily seasoned and in the air-fryer crispy and delish side
