Probs a silly question but how can astronomers tell the characteristics of stars/planets that are no where near us? I can never wrap my head around it

If there’s still hydrogen “burning” around the core, I’m assuming there’s other stuff “burning” to fuel the increased size?

if I was in on an earth like planet in a system with a red dwarf or red giant would the light look red? (I'm assuming I'm fine just standing there)

Can was observe stars in all of these fusion modes? They stay in these different modes long enough for astronomical observation?

I'm amused at carbon being the output of burning. Even if you did mean fusion.
