I just learned how to make these for PENNIES a day in the instant pot. I soak, rinse, pressure cook 1.5 hours in a colander inside instant pot, drain, sterilize everything. Let the beans cool down to warm on the colander as is. Mix 4 tablespoons sterile bean water with 1 scoop of natto spores (Amazon), mix into beans, put beans in instant pot and ferment on “normal” yogurt mode for 20-24 hours with a Saran Wrap with holes over beans, a paper towel over the lid and the lid upside down inside the IP … easy peasy and strong threads!!!! They last about a week before amino protein crystals form , a bit gritty but totally harmless. You can freeze in portions in the freezer for freshness if you can’t finish within the week for max freshness.
