Remove moisture (salt, paper towel), press in a cast iron, pressing helps an even crust, you don’t want a steam pocket, which causes grey spots.

reverse sear makes for incredible crusts and less smoke from a hot pan. the slow cook dries the surface perfectly

2 days before for eye filet is my go to I did an experiment and 2 days salted and peppered before hand is so moist and tender. 3 days was too dry.
