By watching episodes 4&5 you follow Luke’s journey and him discovering the galaxy, what the force is and get the twist of Vader. Then going back to 1-3 after you build on the character of Anakin and Vader; who he was, what turned him and who he could have been. Then you have a fight between father and son in ep 6 with the weight and gravity of the full story. You care about the relationship so much more because we, the audience, like Anakin and see he just fell under the power of the Emperor. It’s not just the hero who is fighting a bad guy with a twist. It’s about Luke trying to save his father’s soul, more so than the fate of the galaxy. It’s his son’s belief in him that returns him to the light. That’s where the Skywalker Saga truly ends.

I’ve done this before. I’d always watch Episode 1. Adds more weight to Anakin being the ‘chosen one’ and how unsure council were to take him in.

Skipping Ep1 means you miss out on the Sith revealing themselves, you miss out on Anakin's backstory, Duel of the Fates, Palpatine coming into power..
