Three-Bean & Corn Chili over Dairy-Free Butternut Mac & Cheese Serves 4–6 Ingredients For the Chili - 1 tablespoon olive oil - 1 white onion, diced - 1 shallot, diced - 1 pound ground beef - 1 (15 oz) can great Northern beans, drained - 1 (15 oz) can pinto beans, drained - 1 (15 oz) can black beans, drained  - 1 (15 oz) can pinto beans, drained  - 1 (15 oz) can corn, drained - 1 (28 oz) can whole peeled tomatoes, roughly crushed with hands or spoon - 1 packet McCormick Mild Chili Seasoning 1–2 teaspoons maple syrup, to taste For the Dairy-Free Butternut Mac & Cheese - 1 medium butternut squash, peeled, seeded, and cubed - 4 cloves garlic, peeled - ½ medium shallot - 1–2 tablespoons olive oil - Salt, pepper, onion powder, and garlic powder, to taste - 3 tablespoons coconut cream - 3 tablespoons nutritional yeast - 12–16 oz pasta of choice (macaroni or short pasta works best) ⸻ Instructions Make the Chili 1. Heat olive oil in a large pot over medium heat. Add onion and shallot, cooking until softened, 3–4 minutes. 2. Add ground beef, breaking it apart with a spoon, and cook until browned. 3. Stir in beans, corn, crushed tomatoes (with juice), chili seasoning, and water. 4. Add maple syrup to taste, starting with 1 teaspoon, to help mellow the tomato acidity. 5. Bring to a simmer, reduce heat to low, and cook for 25–30 minutes, stirring occasionally to let flavors meld. Make the Dairy-Free Butternut Cheese Sauce 1. Preheat oven to 400°F  2. On a sheet pan or cast iron, toss cubed butternut squash, garlic cloves, and shallot with olive oil, salt, pepper, onion powder, and garlic powder. Roast for 25–30 minutes, or until squash is fork-tender. 3. Transfer roasted squash, garlic, and shallot to a blender. Add coconut cream and nutritional yeast, then blend until completely smooth.
