I use this flour with my homemade active starter and I put it in the fridge after it had risen and let it sit for a couple days and then when I got it out when I tried to form a pizza it just broke

I buy the #kingarthurbaking pizza flour/mix by the case and have it shipped. It is fantastic. It’s pretty much the only flours I use.
