AD Tandoori Chicken & Saffron Rice  I’ve bought you not ONE but FOUR recipes in one with @Ninja Kitchen UK - using the #NinjaCombi - an entire meal ready for the whole family using only one appliance! Minimal time and effort with maximum flavours - what more could we ask for? The tandoori chicken turned out so succulent and the rice was absolutely perfect - give it a go! Recipes - Chicken:  1 kg Chicken leg quarters  4 tbsp Greek yoghurt  1 thumb size piece ginger  4 cloves garlic 1 lemon, juiced  1 tbsp tomato purée  1 tbsp ground cumin  1 tbsp ground coriander  1 tsp fenugreek leaves  1 tsp red chilli powder (or to taste)  3 tbsp tandoori masala  1/4 tsp red food colouring  Salt to taste  1 tbsp ghee  1 tbsp veg oil  Saffron Rice:  2 cups washed rice  4 cups chicken or veg stock/water  1 tsp saffron & 2 ice cubes  1 bay leaf  1 stick cinnamon  Salt and pepper to taste  1 tbsp ghee  Kachumber salad:  5 baby cucumbers  1 red onion  2 tomatoes  Handful coriander  1 tsp dried mint  1/2 lemon, juiced  1 tbsp olive oil  Salt & pepper  Coriander & Mint Chutney:  Handful of coriander  Equal amount of fresh mint  2 green chillies  1 clove garlic  1 tsp cumin seeds  1/4 cup water to blend  Salt to taste  1-2 tbsp Greek yoghurt (after blending)  Directions:  1. Mix together all ingredients for marinade and add scored chicken quarters. (Salt and chilli will depend on your brand of tandoori masala as this differs, add the tandoori masala first and have a taste then adjust salt and chilli accordingly before adding chicken)  2. To give tandoori chicken an authentic Smokey flavour, I like to smoke with coal in a foil boat with a drizzle of oil and cover for 10 mins. This step is optional. 3. Allow chicken to marinate for at least 1 hour to overnight. 4. To get the most of your saffron, grind into a powder and add ice cubes. This is the best way!! 6. Turn ninja combi to combi meal setting, add both trays in and set to 200 degrees for 15-18 minutes. 5. Add veg/chicken stock/water to washed rice along with saffron water, bay leaf, cinnamon stick, salt & pepper and ghee. Mix well. 7.
