Ramadan Recipes: Mini Chicken Pot Pies Recipe: Makes 10 - 300g Chicken Breast - 1 tbsp oil - 1½ tbsp butter (20g) - 1 small onion - 2 cloves garlic - 1 tsp onion powder - 1 tsp red chilli flakes (optional) - 1 tsp oregano - ½ tsp salt (to taste) - ½ tsp pepper - 2½ tbsp plain flour (20g) - 1 cup chicken stock (250ml) - 3-4 tbsp double cream (50ml) - 2 tbsp parmesan (optional) - ⅔ cup frozen mixed veg (100g) Either 2 puff pastry sheets or 1 packs of Shazmin’s 5” cicular puff pastry and 1 pack of 4” (available in many south Asian supermarkets) You can easily replicate this recipe with shortcrust pastry instead!  Method: 1. Heat butter and oil in a pan. Sauté onions and garlic for 2-3 minutes until soft. 2. Add diced chicken and seasonings, cooking on medium heat for 7-8 minutes until the chicken is cooked. 3. Stir in flour and cook for 3-4 minutes. 4. Pour in chicken stock (250ml water + ½ stock cube or fresh stock) and stir for 3-4 minutes until thickened. 5. Add frozen veg, simmer for 3-4 minutes, then stir in double cream and Parmesan (optional-I just had some to use up and thought it was a great addition). Remove from heat. Adjust thickness to personal preference with more stock or longer simmering. 6. Let the mixture cool completely. 7. Line a cupcake tray with circular puff pastry, tucking it in. Line with baking paper first if the tray isn’t non-stick. 8. Fill each with 1-2 tbsp of cooled chicken filling just below the top of the pastry (do not overfill otherwise these will leak in the oven) cover with a smaller pastry round and seal by pinching and folding the edges. 9. Make slits, brush with egg yolk, and bake in a preheated oven at 180°C for 20 minutes. 10.
