Reasons I switched to a high ratio feeding… At first it was because more experienced sourdough bakers were telling me to 😁.  Then I learned it: • Is ideal for building starter strength… High feedings are especially useful when reviving or strengthening a sluggish starter • Keeps acidity in check… Dilutes acids that build up, reducing sourness and keeping the starter balanced and healthy • Encourages strong yeast growth…  Provides more fresh food (flour and water) for yeast, promoting robust fermentation and rise • Slows down fermentation…  High ratios ferment more slowly, which can be helpful for timing or when maintaining at warmer temperatures • Reduces hooch formation… Prevents alcohol buildup (hooch), which can occur when a starter is underfed or overly acidic • Extends time between feedings…  Gives you more flexibility because you can go longer before the next feeding without the starter degrading • Improves starter stability… Promotes a more predictable and resilient microbial balance, especially helpful in fluctuating environments • Minimizes off odors and mold risk…  Keeps the starter fresher and cleaner, making it less prone to foul smells or contamination • Less discard waste…  Because the starter stays usable longer, you can feed less frequently if needed, leading to fewer discards over time Feel free to ask me questions if you have any… I am happy to share all I’ve learned through trial and error! 😅 #sourdoughstarter #sourdoughforbeginners #sourdoughstarterfeeding #highratiofeeding #feedingsourdoughstarter #sourdoughstartertips
