We planted a lot of celeries this year and we have been harvesting stalks throughout summer. Now that winter is near, we’ve harvested what remains and processed it for long term use. NO WASTE Roots, will decomposed in the garden bed providing nutrient and help aerate the soil. Bottom stalk can be regrown gain. Just placed it in a shallow bowl near a sunny window and watch it grow again. Stalks can be used for many dishes. My son’s favorite is ants on a log which is a fresh celery stalk, with peanut butter and raisins on top. You can also make fresh juice, add them to your smoothie, it goes great with pasta sauce, soups or dehydrate and freeze for later use. SOUP IN A JAR Mix and cut in small pieces. Celery stalks, carrots, onions, green onion, sweet pepper and mushroom. Dehydrate and store in an airtight jar. CELERY LEAVES They are edible and can be used as garnish, make celery salt or herbed pepper. HERBED PEPPER Used as flavoring, mix dry herbs (Rosemary, Thyme, Marjoram) dry celery leaves, and black pepper.
