Sourdough Cold Proof I wanted to answer the question “Is cold proofing sourdough necessary?”. Cold proofing basically means you put your dough in the fridge overnight before you bake it. This helps slowly build more complex flavors and a thick blistered crust. I’ve always done it, but I wanted to see what happens if you don’t. The loaf on the bottom was the warm loaf and the one on the top was cold proofed for 12 hours - everything else was the same. The warm loaf looks okay, but the cold loaf looks much better. The warm one still has the flour on the crust while the cold loaf crust is blistered, thick, and has a much more complex web of textures. The cold loaf has a much more pronounced thud when you tap it which means it has more air than the warm loaf. The warm crumb (the interior part of the bread) has bigger air pockets and the cold loaf has a more evenly distributed mix of medium and small holes, which is definitely more desirable. Overall, my opinion is that cold proofing is definitely worth it and I’m going to continue doing it.
