I'd imagine organ failure - kidneys due to prolonged reduced o2 levels as sleep apnea develops, or due to increased general demand. heart failure due to cardiomegaly due to similar? something along those lines I'd expect.

If it affects smooth muscle, then the GI tract will ossify. Otherwise I'd guess fatality due to suffocation.
