@backyahdbbq: I’m not a huge fan of grill marks on my steaks. I prefer the flavor of a consistent char across the entire surface. One way to achieve that is with the cold grate method. I pre-salt my steaks in the fridge overnight to let the salt penetrate throughout and tenderize it. I get my grill ripping hot with some charcoal and wood chunks, but don’t put my grate on yet. In my opinion, grill marks add a bitter taste to the steak because those little strips have to burn while the rest of the surface chars. The steak goes on the grate while it is still cold. I put both over the heat when the flames have died down I cook it a minute or so per side paying close attention to the sear. When it’s close to my target temp I remove the grate and put the sides directly on the hot coals to crisp up the fat. Let it rest a bit.
