in restaurants all silverware must go through 3 times. flat rack, up in silverware rack, down in silverware rack. fyi

as a dishwasher i took so much pride in double running it, hand drying it and making sure it’s properly heat treated and sanitized 😩

Where I work..they get washed properly, then get polished, and rolled, if any are seen to be dirty we wash it again
