@lagomchef: Happy to take the flack on this one 😂 I genuinely would not be able to tell you the reason why this went weird… blame the beef 😂 Just for reference I was talking about CELCIUS not FAHRENH EIGHT Red meat coming out of the oven at 45c should be perfect after resting. I think my key takeaway from this for you guys cooking at home is that stuff goes wrong even when you know what your doing. A decent bit of beef will look amazing and a cheaper joint may not be that blushing pink we all want.
