@dinners_with_ire: Replying to @southoftheborderqueen Loved seeing all the different ways you call this dessert in your country! In Venezuela we call it quesillo. 1.) Over medium heat in a cake pan melt 1/4 cup granulated sugar. Then add 1 tablespoon water and swirl around to cover the entire pan. Set aside to cool. 2.) Blend 1 can (300 ml) sweet condensed milk, 300 ml milk (same volume as the can), 1 teaspoon vanilla extract, and 5 eggs. 3.) Pour in the cake pan and cover tightly with aluminum foil. Add rack to bottom of the Instant Pot and about 3 cups water, then the covered cake pan. 4.) Pressure cook on high 10 minutes, natural release 10 minutes, and quick release the rest. 5.) Let cool completely at room temperature, then chill in the fridge overnight, or at least 3 hours. 6.) Loosen the sides with a knife, then flip over your serving dish. Cut, serve, and enjoy!
