Lemongrass Pork Belly Bowl Servings: 2 - [ ] 1/4 lb of sliced pork belly - [ ] 1 tbsp soy sauce - [ ] 1 tbsp brown sugar - [ ] 1 tbsp mirin - [ ] 1/2 tsp of fish sauce - [ ] 1 tbsp Ginger (grated with juices) - [ ] Lemongrass (1 tbsp) - [ ] 2 cloves of garlic 1. Prepare aromatics. Mince garlic, grate ginger. Remove outer layer of lemongrass stalk and smash and mince inner portion if necessary. (I had a lot of extra lemongrass paste so I decided to use that) 2. Combine soy sauce, brown sugar, mirin, fish sauce, ginger juice and aromatics. 3. Slice pork belly into small pieces. 4. Heat pan on medium low heat. Fry pork belly till light golden brown. 5. Remove pork belly and set aside on a paper towel. 6. Blot pan with paper toil to remove excess oil. 7. Lower heat and pour prepared sauce into sauce pan. Scraping all the crispy bits on the pan into the sauce. Heat sauce till sauce thickens. Toss pork belly back and coat evenly. 8.
