When dry brining a steak, first brush the surface with a mild baking soda solution to neutralize surface acid, to improve Millard reaction.

To avoid the weird baking soda taste, rinse off sliced meat (beef, chicken) in some water afterwards. Won't really work with ground beef though.

How does using baking soda affect the amount of salt you add to the dish? Do you need to use less salt?

The baking soda is a buffer so it would not raise the pH more than neutral which is pH 7. Your graphic goes way above 7
