Today we’re making Torta Della Nonna or “Grandma’s Pie” but with a pistachio twist! 💚    I wanted to share something special for Mother’s Day so my friend @Giuseppe’s Shop came over to show me how to make his version of this traditional Italian dessert. Typically it’s made with a vanilla lemon custard filling, topped with pine nuts and sugar. But Giuseppe has taken things to the next level with the addition of pistachios and a thick chocolate sauce! 😍  Here are some of his top tips for how to make the perfect Torta Della Nonna:  - When making the dough you should have cold hands. You can also put the flour in the freezer for half an hour before using. This way the butter won’t melt and the crust will be shorter and crumblier.  - Don’t over work the dough and don’t treat it like a bread. You want to form as little gluten as possible.  - Even if the dough looks sticky don’t add any extra flour - it will make it too dry.  - If you leave the dough in the fridge for at least half an hour before rolling it will be much stiffer and easier to manage.  - To make the pistachio cream, you can blitz pistachio kernels in a food processor until they form a paste or dough.
