🍋🫒🌿Braised Chicken Cassoulet 🥘💛🫘 • ** SAVE THIS POST** Recipe ingredients: 4 chicken thighs - bone in and skin on  3 tablespoons flour Olive oil Salt  Pepper • 1/2 onion 🧅 sliced 3 stalks of celery chopped 1 can of drained white cannellini beans 1 bunch of kale or 2 cups roughly chopped 1/3 cup dry white wine 1 cup chicken broth 2 cloves of garlic chopped 1 sprig of fresh rosemary  1- 2 lemons 🍋 quartered  1/2 cup of mixed green and Kalamata olives 3 tablespoons butter Celery leaves for garnish  Good crusty bread 🍞  • METHOD: Season both sides of the chicken with 2 teaspoons salt and 1 teaspoon of pepper. Dust the seasoned chicken in flour and set on a plate. Add 2 tablespoons of olive oil to a bottom heavy skillet- I’m using a @lecreuset braising pan. Turn to medium high heat and add in chicken skin side down and lower heat to medium. Cook chicken on one side h til golden brown and crispy- about 10 minutes. Then flip the chicken and cook for another 8 minutes on medium. Remove the chicken from the pan and set aside (it is still raw In The middle!) to the pan with lots of good chicken fat and olive oil, add onions and celery. Season with 1 teaspoon of salt and a little pepper and saute on medium heat for 5 minutes. Next, add in the can of beans, kale, garlic, wine and chicken broth. Stir together on medium heat and then add in the rosemary, butter and nestle the chicken back into the saucepan. Next add the lemons and olives.  Pop into the oven at 350 degrees for 15-20 minutes. Garnish with some fresh torn celery leaves a squeeze of lemon juice and a pinch of @maldonsalt on top!
