@minaelleskitchen: CREAMY DREAMY PINK PASTA 🍝💗 INGREDIENTS -1 small cauliflower -2 tbsp. olive oil -1 tbsp. salt -1 tbsp. pepper -2 tbsp. Italian seasoning -1 tbsp garlic powder (or 2 cloves minced garlic) -1 can of beets with liquid -1/3 c. nutritional yeast -1/2 lemon (2 tbsp. lemon juice) -400g pasta METHOD Preheat oven to 400F and boil water for pasta. Cut cauliflower into small pieces then coat with olive oil, salt, pepper, Italian seasoning and garlic powder. Place cauliflower on a lined baking sheet then roast for about 20-25 minutes in the oven until golden brown. Add pasta to boiling water. In a blender or food processor, add the roasted cauliflower, canned beets (I used 5 but you could use the whole can), 1/2 c. beet liquid, nutritional yeast and juice from 1/2 lemon. Blend then pour over cooked pasta and mix. I topped with parsley and chopped cashews.
