The best homemade garlic fire oil I have ever tried, using fresh chillies from your garden and turn the leftover solids into a delicious paste or condiment🌶️ Ingredients: * 1 litre avocado oil (or neutral oil: sunflower, rapeseed, grapeseed) * ~25 garlic cloves (200 g), peeled * 15 fresh chilies (mixed red & green), roasted 40 minutes at 180°C, then sliced * ½ cup chili flakes (about 30 g) * 1 cup (140 g) roasted peanuts, unsalted Step by step: Sterilise a glass jar and make sure it’s completely dry and slightly warm. Layer the ingredients in the jar: chili flakes at the bottom, then garlic cloves, then the sliced roasted chilies, and finally the roasted peanuts on top. Heat the oil in a saucepan to about 160–170°C, hot but not smoking. Carefully pour the hot oil over the layered ingredients in the jar until everything is fully submerged. Stir gently with a clean spoon to release any trapped air bubbles. Leave to cool completely at room temperature. Once cooled, stir again and strain through a fine sieve or cheesecloth into sterilised glass bottles. Store in the fridge and use within 4–6 weeks. With the strained solids (garlic, chilies, peanuts, flakes), blend into a smooth paste, adding a spoonful of oil if needed. Spread the paste thinly on a dehydrator sheet and dry at 60°C for 6–8 hours, or on parchment in the oven at 70–90°C for 3–5 hours with the door slightly ajar, until crisp.
