Pastéis de Bacalhau 🐟🇵🇹 . . Traditional Portuguese codfish cakes that are crispy on the outside and soft on the inside. Recipe (20 pieces) Ingredients: - 1 lb (450g) salted codfish - 1 lb (450g) potatoes, peeled and chopped - 1 medium onion, finely chopped - 2 cloves garlic, minced - 2 tablespoons fresh parsley, finely chopped - 3 large eggs - Salt and black pepper to taste - Vegetable oil, for frying Instructions: 1. Prepare the Codfish: - Soak the salted codfish in cold water for 24 to 48 hours, changing the water during this period to remove excess salt. - After soaking, drain the codfish and place it in a pot with fresh water. Bring to a boil and simmer for about 10 minutes, until the fish is tender. - Remove the codfish from the water, remove the skin and bones then Shred the codfish finely using your hands or a fork. 2. Cook the Potatoes: - In a separate pot, boil the chopped potatoes in salted water until they are soft and easily pierced with a fork, about 15 minutes. - Drain the potatoes and mash them until smooth. 3. Prepare the Mixture: - In a large mixing bowl, combine the shredded codfish and mashed potatoes. - Add the chopped onion, minced garlic, and chopped parsley to the mixture. - In a separate bowl, beat the eggs and then add them to the codfish mixture. Mix everything thoroughly until well combined. - Season with salt and black pepper to taste. Be cautious with the salt as the codfish may still retain some saltiness. 4. Shape the Codfish Cakes: - Using two spoons, shape the mixture into small oval or egg-shaped cakes. You can also use your hands to form them into small balls if you prefer. 5. Fry the Codfish Cakes: - In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches about 350°F (180°C). - Fry the codfish cakes in batches, making sure not to overcrowd the pan. Fry each cake for about 3-4 minutes or until they are golden brown and crispy on all sides. - Use a slotted spoon to remove the cakes from the oil and place them on a plate lined with paper towels to drain any excess oil. #fish #Recipe #food #portugal
