@mattadlard: Yeast 101! I could’ve probably done a 10 minute video but had to cut it short in the end 😂 Here’s my quick guide on the three main types of yeast, how they differ, and how you can use them in a recipe! I ran out of time but a few points I wanted to add: Fresh yeast is my preference but has a 1-2 week shelf life in the fridge (and it can be hard to tell if it’s active as the shelf life timing is pretty vague). You can also freeze it for up to 6 months in a container. IDY/ADY have a shelf life of up to 2 years though, so are great for longevity and to use at short notice. I also find the speed at which the dough proofs can vary - for me Fresh Yeast is quicker, but some people say IDY/ADY is for them. So it can take some trials to really understand the yeast you use but hopefully this little video helps!
