@chacekitchen: I love these stuffed bell peppers because they require minimal chopping, come together in one pan, and the leftover stuffing is sooo good in some breakfast tacos the next morning. The original recipe I used is Quinoa Stuffed Bell Peppers from Damn Delicious (sorry I don’t think I can link it but if you Google it will come up). We just made a few changes: -add some ground turkey/sausage/beef (whatever you like). Saute that in a pan on medium heat until almost cooked through. -then add 1/2 chopped onion, chopped pepper tops that were remaining, fresh garlic, and saute for a few minutes. -add remaining ingredients directly to the pan instead of a separate bowl to avoid extra dishes. -used rice instead of quinoa -added cheese on the top instead of mixing in #stuffedpeppers #stuffedbellpeppers #EasyRecipe #easydinnerideas #easydinner #bellpepper #weeknightdinner
