@chacekitchen: The butcher told me to try it with lamb next time! Osso Buco: 1) Pat your veal shanks and dredge in flour. 2) Brown in vegetable oil over medium heat for a few minutes each side until you have a nice crust. Remove from dutch oven. 3) Add chopped onion/carrrots/celery and saute for about 5 min over medium heat. Add some salt. Then add in some tomato paste and mix it up. 4) Add your veal back into the pan along with a good amount of dry white wine. 5) Once that has reduced, add chicken/beef stock, whole garlic cloves, fresh rosemary, fresh thyme, a few bay leaves, salt and pep 6) After it starts to simmer, cover and put in oven for 2.5-3 hours at 350. Gremolata: Mix together some very finely chopped parsley, lemon zest, minced garlic, salt and pepper to taste.
