A shepherd’s pie flipped on its head — crispy jacket potato base, cheesy mash, rich lamb mince, honey-glazed carrot ribbons and garlic bread croutons that crunch like Vecna’s footsteps 👀✨ A cosy British classic… with a Stranger Things twist. Would you dare try it? ⸻ THE UPSIDE DOWN SHEPHERD’S PIE — RECIPE Ingredients Jacket Potato: • 1 large baking potato • Olive oil • Sea salt • Butter • Black pepper • Mixed cheese Shepherd’s Pie Mince (quick method): • 1 onion, diced • 400g lamb mince • 1 small carrot, finely chopped • 1 tbsp tomato purée • 1 chicken stock cube • Thyme • 1 sachet shepherd’s pie mix (follow packet instructions) Carrot Ribbons: • 1 large carrot (peeled into ribbons) • Olive oil • Sea salt • Honey Garlic Bread Croutons: • Garlic bread slices, cubed Garnish: • Fresh parsley ⸻ Method 1. Jacket Potato 1. Pierce the potato all over with a fork. 2. Wrap in kitchen paper and microwave for 6 minutes. 3. Transfer to foil, brush with olive oil, sprinkle sea salt, wrap. 4. Air fry at 180°C for 45–50 minutes. 5. Uncover and air fry at 200°C for 10 minutes to crisp. 2. Shepherd’s Pie Mince 1. Cook onions and lamb mince until browned. 2. Add carrot, tomato purée, stock cube and thyme. 3. Stir in shepherd’s pie mix and cook as instructed. 3. Carrot Ribbons 1. Toss ribbons with olive oil and sea salt. 2. Air fry at 180°C for 8 minutes, turning halfway. 3. Drizzle with honey once cooked. 4. Garlic Bread Croutons 1. Cut garlic bread into cubes. 2. Air fry or bake until crisp and golden. 5. Assemble 1. Cut a cross in the potato. Add butter, salt and pepper. 2. Mash lightly and fold in the cheese. 3. Load with shepherd’s pie mince. 4. Top with carrot ribbons and garlic bread croutons. 5. “Savoring a classic: Chicken and sweetcorn jacket potato, where comfort meets deliciousness.” 2-4 All-purpose potatoes or large Maris piper 650g Chicken tenders breast 1 tbsp Ranch seasoning 1 small can of sweetcorn 3 tbsp Mayonnaise Sea salt and pepper Chicken stock Butter Crispy onions Fresh parsley Wash and pierce holes all over potatoes Brush with olive oil Seasoned with sea salt And wrapping foil Set the air fryer to baking at 170°C for 45 minutes (depending on the size of your potato may take less) Once the potatoes are finished open the foil, lightly spray with oil, add a pinch of salt and cook for a further 15 minutes at 205°C this will help to get the skin crispy. Whilst the jacket potatoes are cooking prepare the filling. Boiled the chicken in 3-4 cups of water 1 tsp chicken stock and salt to season. Boil for about 15 minutes Once cooked drain the chicken, then add to a bowl and shred the chicken. 1 tsp of salt and pepper 1 tbsp of ranch seasoning 1 small can of drained sweetcorn 3-4 tbsp mayonnaise A mixed combine. Cut open the jacket potato add butter mash it up season with the salt and pepper, then add the chicken filling. The ultimate comfort food — you have to try this one! 😍🔥 ⸻ 🛒 Ingredients • 1 large baking potato (Maris Piper or similar) • Olive oil • Sea salt & black pepper • 1 tbsp garlic & herb butter • Handful of mixed cheese • 1 rump or sirloin steak • ½ tsp adobo seasoning • ½ tsp mixed herbs • ¼ tsp Cajun seasoning • 1 tsp garlic & herb butter (for the sauce) also extra for potato • 2 cubes (32g) Boursin garlic & herb cheese • 150ml double cream • 1 tsp chicken stock powder • Crispy onions & fresh parsley (to serve) ⸻ 🔥 Method 1. Cook the Potato: Pierce the potato all over and wrap in kitchen paper. Microwave for 6 minutes. Transfer to foil, brush with olive oil, season with sea salt, wrap up, and air fry at 180°C for 45 minutes. Uncover and cook for a further 10 minutes at 205°C until crisp. 2. Cook the Steak: Season both sides of the steak with adobo, mixed herbs, Cajun seasoning, salt and pepper. Cook in a hot pan for 2 minutes each side, then remove and rest. 3. Make the Sauce: In the same pan, melt 1 tsp garlic & herb butter. Add Boursin cubes, cream, and chicken stock powder. Stir until thickened, then pour in any resting steak juices. 4. Assemble: Cut the potato in a cross shape and fluff up the centre with a fork. Add a little garlic butter, cheese, salt and pepper, and mash lightly until creamy.
