Bolting is a natural reaction a plant has when its under stress. This could be from not enough water, or too much sun or just a load different reasons (they’re quite fussy) At this time of year its generally because of heat and watering. The plant gets stressed and thinks Ive got to ensure the next generation is okay and so it produces a thicker stronger stalk which will hold up a flower at the end. If you allow it to grow then the flower will produce seeds. In some cases this is a good thing, for example i let my coriander flower and set seed as coriander seeds are yummy, same with rocket. But in most cases the bolting plant is unsightly and it will change the taste of the vegetable. Due to the stem becoming thicker and sturdier, the vegetable becomes woodier and tough to eat. For me personally, i try to be super prepared and as soon as i see something bolting, it comes out and a plug plant that ive been bringing on in my greenhouse goes straight in. #vegetablegarden #gardentok #spinach #growyourown
