@clairehodginss: I have been loving this AVOCADO EGG SALAD for an easy 10 minute lunch! 🥑🥚 To make this super quick, pre hard boil eggs at the beginning of the week so all you have to do is mash everything together and it’s ready to go! This lunch is high in protein and healthy fats to fuel your day 🙌 What you need: - 3 hard boiled eggs - 1/2 of a ripe avocado - 1 tbsp plain greek yogurt - 1/2 tsp garlic powder - 1/2 tsp dried dill - salt & pepper to taste How to: - add all of the ingredients to a bowl and mash with a fork until well combined - I love eating this on toasted sourdough, but you could also have it in a sandwich, wrap or on a salad!
