🐟 Chorizo Cod Butterbean Bake Ingredients: * Chorizo - 225g * Red onion - 1 * Garlic cloves - 3 * Butter bean + juice - 2 tins * Parmesan - 30g * Cavolo nero - 100g * Tender stem - 100g * Cod - 550g * Creme fraiche - 1 tbsp * Panko bread crumbs - 50g 1. Preheat the oven to 200°C. 2. Finely dice one red onion and 3 garlic cloves. 3. Chop chorizo into chunks and add it to a food processor. Blend to a crumb 4. Set aside about a quarter of the chorizo. 5. Add the rest of the chorizo along with the red onion and garlic to an oven tray with 2 tbsp olive oil. Mix and place in the oven for 10 minutes. 6. Strip the cavolo nero and slice the leaves into thin strips 7. Add the butter beans and their liquid along with the sliced cavolo nero to the pan. Mix and pop back in the oven for another 10 minutes. 8. Add 30g grated parmesan and 1 tbsp creme fraiche. Mix well and place ii the oven for another 10 minutes 9. Combine the remaining chorizo with 50g panko breadcrumbs. Season the cod and top with the chorizo crumb. Cut the tenderstem into thirds. 10. Place the cod loins in the pan and lay the tenderstem around. 11.
