I think Paul is wrong about plant defense chemicals. Now keep in mind plant defense chemicals are a real thing. Yes if someone is doing lots of raw spinach or trying to get the bulk of their calories from vegetables, grains, and nuts they absolutely could and probably would run into some issues with plant defense chemicals. However for someone eating a good diet, rich in high quality protein sources and healthy fats…including some vegetables, potatoes, nuts and seeds, and grains if tolerated will actually bring tons of benefits. Potatoes for example, which Paul doesn’t eat, are extremely rich in potassium and beneficial fiber. Vegetables when cooked properly will not pose an issue for the vast majority of people. They provide beneficial nutrients and really help tie a good dish together. A beef stew with carrots, celery, onion, and potatoes for example is just SO good! So yes I agree that the most important thing in a good diet is healthy sources of protein from meat, eggs, dairy, fish, and chicken….but you don’t need to omit vegetables unless you’re dealing with a unique autoimmune issue of some sort. #santacruzmedicinals #health #santacruzpaleo
