Pork Belly with Rice   Ingredients   - 2 thick slices pork belly (preferably from high welfare or sustainably raised animals)   - 2 garlic cloves, finely chopped   - 1–2 Thai chilies, finely chopped   - 120 g rice   -  cucumber, sliced   - 1 small shallot, thinly sliced (optional: soaked in water)   - Optional: extra Thai chili slices for serving For the sauce   - 2 tbsp fish sauce   - 2 tbsp oyster sauce   - 1 tbsp sugar (adjust to taste)   - A pinch of MSG (optional)   - Optional: 1–2 tbsp water to stretch the sauce Instructions First, wash and cook the rice. Second, sear the pork belly slices in a pan until browned and crisp on the edges. Remove, let rest briefly, then cut into bite sized pieces. Third, mix the sauce: combine fish sauce, oyster sauce, sugar, MSG and optionally a splash of water. Stir until everything is dissolved. Fourth, in the same pan with the remaining pork fat, sauté garlic and Thai chili briefly until fragrant. Fifth, pour in the sauce and let it bubble and slightly caramelize over medium heat. Sixth, return the pork belly pieces to the pan and coat them evenly in the reduced sauce. Seventh, serve the pork belly over hot rice. Add cucumber slices and shallot on the side. Optionally top with extra fresh chili. Use pork belly preferably from high welfare or sustainably raised animals.
