@uthika_naidu: How to marinade meat for Biryani This recipe is for 1kg Lamb, which will feed approximately 6 people. Marinating meat is an important step for biryani. It allows the meat to retain moisture and tenderizes simultaneously, while also getting those spices to evenly flavour the meat. Ingredients : 1kg meat 1 tomato (blended) A handful of coriander A handful of mint 1 cup maas (I prefer maas over plain yogurt) 3 tbsp kashmiri mixed masala 2 tbsp biryani masala 1.5 tbsp turmeric 1 tbsp cumin powder 1/2 cup fried onions 2 tbsp fresh ginger & garlic paste Salt to taste (about 2 tbsp) Mix well and marinade overnight in the fridge. I always recommend biryani prep be done the day before to cut down on the cooking time on the day. Tips : 1. Using fresh ginger & garlic gives the marinade a far superior flavour. The elimination of preservatives makes a world of difference. 2. Fresh herbs also compliment red meat perfectly, especially mint. 3. I find that Maas carries the spices far better than yogurt.
