@cnmooree: Healthier Peach Cobb 🍑 🤤 2 & 3/4 cup canned peaches drained (keep two tablespoons juice from can) 2 tablespoon peach juice 1/2 cup maple syrup 1 tablespoon arrowroot powder 1 teaspoon cinnamon 1 & 1/4 cup almond flour 2 teaspoons baking powder 1/4 teaspoon salt 1/4 cup softened coconut oil 1/4 cup coconut milk 2 tablespoon maple syrup Preheat oven to 425 and spray an 8×8 inch baking dish with cooking spray (I use coconut oil) In a small saucepan over medium heat, combine the peaches, maple syrup, arrowroot powder, cinnamon and peach juice. Bring to a boil, then reduce the heat and simmer for about 10-15 minutes, stirring occasionally, until the peaches are soft and the sauce is thickened In a large bowl, whisk together the almond flour, baking powder and salt. Cut in the coconut oil with a fork or blender In a small bowl, whisk together the milk and maple syrup. Add the wet ingredients to the flour mixture and stir until a dough forms. Pour the peach mixture into the prepared baking dish and spread it evenly. Drop the dough by heaping tablespoons over the peach filling, leaving some gaps for the steam to escape. Bake for 26-30 minutes or until the topping is golden and the filling is bubbly.
