Tortang talong really hits different with fresh eggplants 🥰 and nice twist in the addition of perilla. I could just imagine how marvelous it taste!

I suggest you grill the eggplant rather than putting it in an oven 😁 also, really flatten the eggplant out and while doing it, check for worms/bugs!
