@meggrowsplants: Beet ricotta tortellini with roasted carrots. The garden is always pushing me to experiment in the kitchen, and sometimes it doesnt come out as planned! This was my first time making tortellini, and a few things: the color was alot more muted than i wanted, they were alot bigger than i would have liked, and although the ricotta, sweet potato leaf and swiss chard filling was soooo delicious, it was just a little dense because they were so big!
