I believe it’s such a beautiful thing when two cuisines can come together and create something magical. 🤌🏾🥰 That’s how I would describe this fusion “Creamy, Curried Mushroom and Pepper Pasta. In one word it’s “Magical” I got 3 thumbs up, it’s that good 👍🏽 👍🏽👍🏽 Ingredients - 2-3 tbsp olive oil - 1 tbsp butter - 250g portabella mushrooms - ½ onion, diced - ½ red pepper, diced - ½ green pepper, diced - 2 cloves of garlic, minced - ½ red chili, chopped or as desired - 1 tbsp fresh thyme - 200g cooked pasta (al dente) – I used tagliatelle - 500ml fresh cream - 1 vegetable stock pot - 1 tomato, peeled and diced - ½ tsp onion powder - ½ tsp garlic powder - 1 ½ tsp leaf masala or to taste - ¼ tsp turmeric - Salt and pepper to taste - ½ cup grated cheese Instructions 1. In a pan over medium-high heat, add olive oil and butter. 2. Add the portabella mushrooms, thyme, minced garlic, and chopped chili. Sauté until the mushrooms are cooked. 3. Add the diced onion and peppers. Allow the ingredients to cook together and lightly fry. 4. Stir in the onion powder, garlic powder, salt, pepper, masala, and turmeric. Cook for 2 minutes before adding the vegetable stock pot and diced tomato. 5. When the tomatoes have cooked down, stir in the fresh cream. 6. Turn off the heat and add the grated cheese. The sauce will thicken as the cheese melts with the residual heat. 7. Add the cooked pasta and stir until the sauce thickens and coats the pasta evenly. 8.
