@homemadefoodjunkie: This easy one pan meal is a great budget friendly weeknight dinner. ✨INGREDIENTS✨ * 1 1/2 lb chicken breast (cubed) * 2 1/2 cups broccoli florets (chopped) * 1 cup long grain white rice * 2 1/2 cups chicken broth * 1 small onion * 2 cloves garlic * 2 cups sharp cheddar cheese * 1/2 tsp cracked black pepper * 1/2 tsp salt * 2 tsp olive oil ✨ INSTRUCTIONS ✨ 1. Preheat large skillet on medium heat and add olive oil 2. When skillet is heated, add the chopped onion 3. Cook until onion is translucent and add in cubed chicken breast, salt and pepper. 4. Continue cooking until chicken breast is browned. 5. Add the minced garlic cloves and cook until fragrant (around 30 seconds to 1 minute) 6. Push chicken and onions to one side of pan and add a small amount of olive oil. 7. Add the rice to the pan and sauté for 2 minutes. 8. Pour in the chicken broth and bring to a boil. 9. Reduce heat to low and simmer for 12 minutes covered. 10. Add broccoli to skillet, cover with lid, and cook an additional 8 minutes. 11. Add in the grated sharp cheddar cheese and place lid back on for 3 minutes. (or until cheese is melted) 12. Enjoy! Refrigerate leftovers. #weeknightmeal #dinner #budgetmeals
