Yesterday, I mentioned I’d be bringing you along my “teaching myself how to cook French edition” series where I push myself out of my comfort zone and expand my horizons flavor and skill wise! The next french classic I tackled was this Duck Confit with duck fat potatoes… and I totally get why this dish has been around for centuries now! It’s rich, cozy, and it will leaving you longing for another bite!  I know cooking with duck can feel intimidating (or expensive), but I’d love for everyone to try it at least once. If it’s not your thing I 100% understand and you can totally use chicken quarters instead! Swapping for chicken will still be delicious, more budget friendly, and much easier to source!  Yes, I used a lot of fresh herbs. No, no one’s calling this dish bland that’s for sure!  In this recipe you’ll be using a ton of duck fat to slow cook the duck in! Making duck confit is worth the flavorful fat in itself that you strain it and keep!! You can store it in the fridge or freezer and use it to add ridiculous flavor to roasted veg, potatoes, eggs, and tons of other dishes!!
