@creamy_confusion: it’s just spaghetti // vol 9: ROMESCO Romesco 2 red capsicums 1 long red chilli 1 bullhorn red capsicum 2 tomatoes 3 shallots (skin on) 3 garlic cloves (skin on) 50gm toasted sesame seeds 1 tbl sp paprika 1/2 lemon juice Sesame oil EVOO Sea salt Preheat oven to grill at highest setting 1. Place capsicums, chilli, tomatoes, shallots and garlic on baking tray with a drizzle of oil. Place under grill until everything is burnt and charred super hard, you want everything to be black. Remove from oven and pop in bowl covered with glad wrap for 15 minutes. Once steamed, remove skins from all the ingredients and place in food processor with blade and blitz into sauce. 2. Pour into pot, place on high medium heat and reduce all the liquid (stirring as you go) until you have a thick paste (20 minutes). Place back in food processor and blitz with lemon juice, drizzle of EVOO, sesame seeds, paprika and sea salt to taste and sesame oil to taste. Spaghetti Serves 4 250gm cooked just off al dente spaghetti (some pasta water saved) Romesco sauce Stracciatella cheese Chives (thinly sliced) In pan add in half your romesco onto your spaghetti over low heat with a dash of pasta water and cook for a minute to bring together the sauce and spaghetti. To plate top with dollops of stracciatella cheese and a sprinkling of chives. #romesco #itsjustspaghetti #pasta #pastasauce
