Mix the brown butter with the brown sugar and the pistachio paste. Add the egg and egg yolk to the mixture and stir until well combined. Incorporate the all-purpose flour and baking soda, mixing until a dough forms. Roughly chop the dark chocolate and add it to the dough. Cover the dough and refrigerate it for at least 2 hours.
