@creamy_confusion: 🍳STRAPATSADA🍅 This is baby is a classic little Greek meal to eat for breakfast or lunch and is great when tomatoes are fresh in season. It’s essentially a tomato scrambled egg. Recipe as always is below. 1 brown onion (finely diced) 1 garlic cloves (thinly sliced) 3 big tomatoes 3 eggs (whisked) Cracked black pepper, EVOO & sea salt Garnish: feta, gremolata & dried oregano Start by shredding your tomatoes to release the insides and discard the skin. Place pan on medium heat and add your onion on with salt and oil and sweat for seven minutes. Add in your garlic and cook for another minute before adding your tomato pulp. Season with cracked black pepper and sea salt. Cook together for 10 minutes to reduce by half. Lower heat to low medium and red in your eggs, mixing through gently until it’s cooked through with your tomato mix. Take off once cooked and homogenous. Season again with sea salt. Serve on toast with shaved feta, gremolata sauce and dried oregano. #strapatsada #scrambledeggs #greekcooking #breakfast
